A Special Birthday Dinner

The accompanying tangy apple salad makes this a really different and tasty dish

On Monday evening I wanted to make something special for my husband's birthday dinner. I found this recipe in a magazine. It was simple to make and oh, so tasty.

Pork Cutlets with Apple Salad – Country Life March 2009
(Serves 2)

Cutlets
4 pork cutlets
2 T sweet soy sauce
1 bunch coriander, washed and finely chopped
2 T olive oil

Salad
2 Granny Smith apples, thinly sliced
Lime juice
2 spring onions
Coriander leaves, finely chopped
6 cherry tomatoes
¼ cup roasted peanuts, chopped

Dressing
1 clove garlic, chopped
1 red chilli, deseeded and finely chopped
1 T brown sugar
Juice of a lime
1 T fish sauce

Method
Place the pork in a shallow dish and drizzle with soy sauce.
Add the coriander and 1 tablespoon of the oil.
Toss to coat the pork.
Heat remaining oil in a large non-stick pan over medium heat
Add the pork cutlets and fry for about 2-3 minutes on each side
Remove from pan and set aside to rest while you make the salad
Whisk the garlic, chilli, sugar, lime juice and fish sauce together in a small bowl
Toss the apple in another bowl with lime juice
Add all the other salad ingredients
Pour dressing over and mix well
Serve immediately with pork cutlets

Note: I didn’t have spring onions and used onion rings instead.

  1. Looks delicious, Jo & I love the sound of the salad. How wonderful for you - a vegetarian - to cook your hubby a nice meat dish like this on his birthday - he's a lucky man :) Hope you're having a wonderful weekend ...

  2. Thanks Lynda, it was delicious; not my opinion but his. So enjoyable I had to make it a second time last week! I had the absolutely divine apple salad (which he loved as well) with my lentil stew. Have a lovely weekend. Hugs Jo

  3. Just popped over to your blog to see who my latest visitor was! It is a lovely blog and as Lynda knows I lived in Tanzania for many years and love Africa especially the bush, where I spent almost 6 years in the 80s and had 2 kids in a mission hospital near L. Tanganyika. So look forward to seeing your posts again. Keep in touch with my blog too - pretty diverse posts from political to personal and recipes! (That's what a blog should be I think.)

  5. Hi Catherine, thanks for popping in! Yes, I saw you lived in Tanzania and love your blog. I lived and worked on a goldmine in West Africa earlier this decade and LOVED it. I miss it dearly. I do posts about my life there and actually have one tomorrow! I try to have a diverse topics on my blog to, but instead of politics, I have Soapbox Chronicles and Life testimonies as my special posts. Thanks again for popping in. Hugs Jo

  6. Thanks for the birthday wishes for hubby. I've passed them on and he says thanks! The salad is really scrumptious. It has a unique taste, sour, nutty, fruity and salady. All in one. I was surprised at my husband not only eating it but enjoying it immensely. Thanks for popping in. Hugs Jo
