Lemon Meringue Pie

This weekend for Sunday lunch dessert, I made something different. Lemon Meringue Pie - my alltime favourite dessert! My mother-in-law used to make a very nice LMP in her day so I phoned her in Durban to ask for the recipe. While I did get the basic ingredients ("I use Marie biscuits, 3 eggs seperated, and dont' bake it for too long else it burns") she was more interested in asking me how the weather is here in Kenya! An elderly habit, I presume.

Nevertheless, I have watched her making it over the years and checking on the Internet, found the correct ingredients and the rest was easy. BTW it seems as though it's only in South Africa that the recipe is made with condensed milk - a sweetened milk available in a tin.
Lemon Meringue Pie,  it's TDF (to die for!)

Lemon Meringue Pie (from the Internet, adapted by me)

Pie Crust
1 Pkt Marie (or any sweet) biscuits
250g melted margerine

Filling
2 Tins condensed milk
3 egg yolks (keep the whites for meringue)
Juice of 4 lemons and a little zest

Method

Pie crust
Heat oven to 150 C
Crush the biscuits in a blender
Add to melted margerine
Press into 9" pie plate

Pie filling
Pour condensed milk into a bowl
Add beaten egg yolks
Add lemon juice and zest
Pour into pie crust

Meringue
3 egg whites
1 small cup castor sugar
Using a clean, dry glass bowl, beat the egg whites until stiff
Add castor sugar and beat until shiny and peaks form
Place dollops onto pie filling
Bake for about 15 - 20 minutes
Serve chilled with icecream
Note: watch the pie in the oven, it burns easily


I repeat, it's TDF! (to die for)

  2. My mother always loved lemon meringue pie and so did a few other of my male relatives. I never did see why until I got older. Now I like it too! Yours looks good :-)

  4. I love a good lemon meringue pie! Sometimes, the coffee shops really don't try to do a good enough job and one is left with an eggy mess (that oftens smells far too eggy!). I love it when the base has a rich, lemony flavour and has a sour punch to offset the sweetness. Yours looks beautiful!

  6. That looks so yummy I can almost taste it. Berta bakes LMPs when neighbors give her fresh lemons and sometimes I even get a piece. ;)

  7. Ahhhh! ONE of my favorites! As a boy growing up it was my only favorite - but now-a-days I prefer lemon ice-box pie...or pecan pie...or micro-wave fudge...I can't remember which! ☻ ☻ ☻
